Dahi Baingan Recipe is a delicious and easy vegetarian dish. This brinjal curry is cooked in yogurt with some spices. It is best to enjoy with chapatti/ roti, naan, and flatbread. It is an easy and quick mouthwatering recipe.
Ingredients
- Bringle ( Banigen ) ½ kgs
- Oil for deep frying + ¼ cup
- Yogurt ½ cup
- Onion 2 medium
- Garlic paste 1 tsp
- Tomatoes 3 medium
- Dry coriander 1 tsp
- Salt ½ tsp
- Red pepper ½ tsp
- Turmeric ¼ tsp
- Water ½ cup
- Lemon juice 1 tbsp
- Green chili 1
- Green coriander 3 tbsp
How to Cook Dahi Baingan .? Method
- Wash and cut baingan in a round shape.
- Take oil in a pan and deep fry round slices. Set aside.
- Take another pan and add ½ cup oil to it.
- Now add onion and fry in golden brown colors.
- Add garlic paste, tomatoes, salt, red pepper, turmeric, dry coriander, and water. Make a smooth paste. Cook until the oil separates from the masala. Put masala in a bowl.
- Now in this pan, spread round slices of eggplant in it. make 2nd layer with prepared masala. Now put yogurt on top. Add lemon juice on
- Sprinkle green chili and green
- Cover the pan and cook on medium flame until water evaporates. Very carefully, dish out it on a plate.
- Serve with chapati/roti or naan with salad & pudina ki chutney
