I have published various Mutton Recipes here but this raan steam roast is my favorite. It is because this recipe is so simple and yummy. There is no need to stand by in front of the stove. You just put marinated raan in a wok, seal it and let it be cooked on slow heat for two hours approximately. Therefore, check the meat after 30 minutes or so if it is cooked or not. I have given a recipe of 3 kgs leg(raan)steam roast.

Steam Roast Leg of Mutton Ingredients:
- Mutton Raan 3 kgs.
- Yogurt 1 cup
- Vinegar ½ cup
- Salt 1 tbsp
- Red pepper 1 tbsp
- Garam masala 1 tbsp
- Cumin seeds 1 tbsp
- Dry coriander powder 1 tbsp
- Tikka masala 1 ½ tbsp.
- Turmeric ½ tsp
For paste
- Green chilies 4
- Green coriander ½ cup
- Garlic 15 cloves
- Vinegar 5 tbsp

Preparation for masala.
- Oil 4 tbsp
- Remaining masala from raan
- Red food color ¼ tsp

- Water 3 glass
- Large wok
- Stainless steel strainer with plate 1

How to cook Mutton Leg perfectly.? Method
- Take a raan and cut with a sharp knife as shown in the video.
- Take vinegar ½ cup and pour on raan. Leave it for two hours.
- Grind green chilies, green coriander, garlic, and vinegar, and make a paste.
- Take a bowl and put yogurt in it. Now add green paste, salt, red pepper, Garam masala, cumin seeds, dry coriander, tikka masala, and turmeric in it. Mix well.
- Strain vinegar from raan and put it aside for later use.
- Now marinate raan with the yogurt mixture and put it in the fridge for 4 -5 hours or overnight.
- Take a large wok. Add water 3 glasses of it. Put a stainless steel strainer in it. Add a plate to the bottom of the strainer.
- Now take out the leg from the masala and put in the strainer. Cover it with a lid. Put some heavy objects on it. Cook the leg on a very low flame for almost 3 hours. Check it after 3 hours and if it is not cooked, cook for half an hour more.
- For preparing masala: Take oil in a pan. Add the remaining masala to it. Remaining vinegar from raan and cook until water dries. Now add food color, mix it, and put aside.
- When raan cooks well. Take it out on a plate and apply masala on both sides.
- Steam Raan Roast is ready to serve.
