Best Mutton Biryani Restaurant Recipe
NO.1 Ingredient to boil and tender mutton/ meat /gohst
- Mutton /gosht ½ kgs
- Onion 1
- Garlic 5- 6 pcs.
- Ginger 2” pcs.
- Salt ½ tsp
- Water 2 cups or according to the tender meat.
2 Ingredients for korma recipe
- Mutton ½ kgs
- Onion 3 medium
- Tomatoes 3 medium
- Green Chili 3
- Ginger 2” piece
- Garlic 7 – 8 pieces
- Oil ¾ cup
- Cloves ( loung ) 2
- Cinnamon sticks ( darchini ) 2” piece
- Cumin seeds ( zeera ) ½ tsp
- Salt 2 tsp
- Red pepper 1 ½ tsp
- Turmeric ½ tsp
- Biryani Masala 1 tsp
- Plum ( aloo Bukhara ) 5 pcs.
- Mutton stock 1 cup
- Yogurt ½ cup
- Dry coriander 1 tsp
3 Ingredients for Boiling Rice
- Mutton ½ kgs
- Onion 3 medium
- Tomatoes 3 medium
- Green Chili 3
- Ginger 2” piece
- Garlic 7 – 8 pieces
- Oil ¾ cup
- Cloves ( loung ) 2
- Cinnamon sticks ( darchini ) 2” piece
- Cumin seeds ( jeera ) ½ tsp
- Salt 2 tsp
- Red pepper 1 ½ tsp
- Turmeric ½ tsp
- Biryani Masala 1 tsp
- Plum ( aloo Bukhara ) 5 pcs.
- Mutton stock 1 cup
- Yogurt ½ cup
- Dry coriander 1 tsp
3 Ingredients for Boiling Rice
- Rice ½ kgs ( washed and soaked ½ hour )
- Cumin seeds ( jeera ) ½ tsp
- Salt 1 ½ tsp
- Green coriander & Mint 3 tbsp
- Vinegar 1 tbsp
- 4 ingredients for Biryani Assembling
- Mutton korma
- Boiled rice
- Oil 4 tbsp
- Mint 5 tbsp
- Lemon slices of 2 lemon
- Orange color
- Fry onion
- Water 1 liter
How to make Mutton Biryani at home. Method:
- Take a pressure cooker and add all no.1 ingredients to it. Close the pressure cooker and cook for 20 minutes or until the meat gets tender. If need more water you can add it to soft mutton.
- When meat gets tender then sieve it. Put the meat and remaining stock (water) separately. Discord other ingredients. Mutton and mutton stock ( yhkni ) is ready for korma.
- For making qorma/gravy: First, take a blender and add onion, tomatoes, ginger garlic, and green chilies. Add half a cup of water and make the puree.
- Take a wok and add oil to it. Then add boiled mutton and fry few minutes.
- Add puree/paste to it. Add all spices and plums to it. Fry for 10 minutes and add mutton stock to it. Cook on medium flame until water evaporates.
- Add yogurt/dahi to it. Mix it and mutton korma is ready.
- For boiling rice: Take another wok and add water to it. Now put all ingredients in it. When water boils add rice in it. When rice is cooked strain it. And put aside.
- Assembling biryani for steam/ dum: Take a wok and add 4 tbsp oil on the bottom. Put half-boiled rice in it. Spread all mutton qorma on it.
- Sprinkle lemon slices and mint on it. Now add the remaining rice to the korma. Put remaining mint, lemon, fry onion, and orange color on top.
- Give dum/steam mutton biryani for 20 minutes.
- After 2 minutes, your tasty and yummy mutton biryani/gosht biryani is ready. Serve with salad and raita.
