Special Pakistani Chicken Biryani Recipe: The Biryani restaurant recipe is very famous in Pakistan and India. The Biryani dish is made with meat (chicken, mutton, beef, and fish), eggs, and vegetables. Therefore, Chicken biryani is a hot favorite among people. Chicken and rice are the main ingredients of this amazing complete dish.

1-  Types of Biryani:

Biryani is a favorite food in the sub-continent. Many types of biryani recipes belong to different areas. Most common types are Karachi biryani, Sindhi biryani, Bombay biryani, Hyderabadi biryani, South Indian biryani.

2-     What are the key ingredients in biryani? According to me, fried onions are the key ingredient in a biryani recipe. We need onions chopped and fry in oil on medium to low flame so that onions become crispy and in golden brown color. In this way, onions give a unique flavor to the biryani dish.

 

3- Which spices are used in biryani? There are a lot of spices used in this special Dish. The main spices are salt, red pepper, black pepper, turmeric, Fennel seed · Cardamom · Star Anise · Cinnamon · Cloves · Black stone flower · Nutmeg · Bay leaf. 

 

4- What is the secret of biryani taste? Biryani is flavored with a lot of spices. Using these spices in chicken biryani gives a special aroma to this favorite Pakistani food.

Ingredients no. 1 for Biryani Chicken Marination

 

1- Chicken  - 2kgs

2- Yogurt ( Dahi )  - 2 cup

3- Ginger Garlic paste  - 2 tbsp

4- Lemon Juice -   2 tbsp

5- Salt - 2 tsp

6- Dry coriander  - 2 tsp 

7- Garm Masala - 1 ½ tsp

8- Turmeric -   2 tsp

9- Biryani Masala -  3 tbsp ( 50 gram )

10- Yellow food color - 1/2tsp

11- Red food color - ¼ tsp

12- Oil  - 3 tbsp

 

 Ingredients No. 2 for Gravey

 

1- Onion  - ½ kg

2- Tomatoes -  ½ kgs

3- Ginger Garlic Paste - 2 tbsp

4- Green chilies -   6 

5- Green Coriander - 3 tbsp

6- Oil - 1 cup

7- Chicken powder - 2 tbsp

 

Ingredient NO. 3 

 

1- Rice - 2 ½ kgs

2- Cinnamon -   5 

3- Green Cardamom - 5

4- Cumin seeds ( Zeera ) -   1 ½ tsp

5- Bay leaf  - 4

6- Salt -  4 tbsp

7- Vinegar - 1 tbsp

8- Oil  - 3 tbsp

9- Water -  4 liter

 

 

Ingredients no. 4 for assembling Biryani with Chicken

 

1- Red food color - ¼ tsp

2- Yellow food color -  ½ tsp

3- Milk - ½ cup

4- Kewra water - 1tbsp

5- Green Coriander - 3 tbsp

6- Oil - 4 tbsp 

7- Biryani Masala - 2 tbsp

8- Chicken powder -   2 tbsp

9- Lemon juice  - 6 tbsp + lemon 

 

How to Make a Recipe of Biryani with Chicken? Method

 

1-      Chicken Marination: Take a bowl and add chicken to it. Now add all the ingredients no.1 in it. Mix well and put aside for 2 hours. One hour is enough if in a hurry. Take a wok and put the chicken in it. Cover it and cook on medium heat until required masala.


2-       Masala or Gravy: Take a wok and put oil in it. Add ginger garlic paste. Then add Onion and fry for 10 minutes. After that add tomatoes and cook until water ends. 


3- Add chicken powder, green chilies, and green coriander.


4- When oil separates it is cooked.


5-      Boiled Rice: Soak rice in water for half an hour. Take a large degcha. Add water to it.


6- When water is boiled add all the ingredients no. 3 in it. Strain the water from the rice.


7- When rice is boiled it should be one-third cooked. Strain the water and put rice on the side.


8-      Assembling: Take a large dacha. Divide rice into four portions. Put one portion of rice in the dagcha. Then add masala and steamed chicken. Pour 2 tbsp milk on it. Add lemon juice 2 tbsp. Add chicken powder ½ tbsp. Repeat the process again 2nd time. And add biryani masala in it. In the third layer repeat the process again and add lemon slices and coriander. On the top of the layer add Rice, both colors, kewra water, biryani masala, oil, and chicken powder. 


9- Flame on very low. Put dagcha on it. Cover it with a damp cloth. Cover it with a lid and put some heavy things on it. Cook on very low flame for 20 - 25 minutes.


10- Mix it well after flame off. Restaurant-style steamed chicken degi biryani is ready to serve.
